Ingredients

  • 600 g stir fry vegetable mix
  • 500 g dried noodles
  • 1000 g chicken bone fillet, cut into bite-size pieces (water to cover)
  • 10 tbsp light soy sauce
  • 5 garlic cloves (minced)
  • 8 spring onions (sliced diagonally)
  • 1 tbsp freshly grated ginger
  • 4 tbsp dark soy sauce

Instructions

  1. Marinate Chicken: Pour 3 tbsp of light soy sauce over the chicken, mix to coat and set aside to marinate for 20 minutes
  2. Place chicken in large pot and cover with water. Boil until cooked. (10-15 minutes)
  3. Cook the noodles according to packet instructions, then rinse and drain
  4. Add the vegetable mix in a wok or large fry pan, add garlic, spring onions, ginger and soy sauce, stir fry together for 5 minutes, then add the chicken bites, stir well and continue cooking for 2 minutes
  5. Add the noodles and dark soy sauce, toss together, stir fry for few minutes to let all the flavours combine together.
