Ingredients

  • 250 gr chickpeas canned or cooked)
  • 1 garlic glove, minced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 cups cauliflower florets
  • 1 red pepper chopped
  • 1 cup quinoa, cooked
  • 1 big onion, diced
  • 1 Tablespoon ground flaxseed + 3 Tablespoons water)
  • 2 eggs beaten
  • ¼ cup fresh coriander, finely chopped
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt & Pepper
  • Burger buns
  • Lettuce
  • Tomato
  • Sautéed Mushrooms & Onions
  • Cheese
  • Avocado dressing (smashed avocado and chilly sauce)

Instructions

* Add the chickpeas, quinoa and vegetables in a food processor. Blend together until smooth.
* Remove the dough from the food processor add in, flaxseed water, eggs and spices and stir well to combine all ingredients well.
* With your hands shape the dough into patties.
* Baked the burgers in the oven at 180 degrees.
* Add a slice of cheese to each burger and cook for 2 minutes more. Remove from oven and serve immediately.
* Serve burgers on toasted buns with lettuce, tomato, avocado dressing and sautéed mushrooms and onions. Enjoy! ~ Store any leftover dough in your fridge to use through your week.
