Vegan Hazelnut Cheesecake

Ingredients

  • For the crust
  • 270g dark chocolate digestive biscuits (sugar free)
  • 2 tbsp coconut butter melted
  • For the filling
  • 18 medjool dates
  • 1 tsp vanilla
  • 4 tbsp hazelnut butter
  • 1/2 cup coconut cream
  • 1 tbs chia seeds
  • For the caramel sauce
  • 1/4 cup agave syrup
  • 1/4 cup coconut butter
  • 2 tbs peanut butter
  • 1/2 tsp vanilla extract
  • For the caramelized hazelnuts
  • 1 cup hazelnuts raw
  • 3 tbs agave syrup
  • 1 tbs coconut oil

Instructions

For the crust

  1. Blend the biscuits in a food processor. Add the melted butter and mix until moistened
  2. Pour the biscuit crumbs into a 10 cm spring-form pan and press down with the back of a spoon. Place in the fridge to chill and until the filling is ready For the filling

For the filling

  1. Place dates, coconut cream, vanilla and hazelnut butter in a food processor and process until smooth. Add chia seeds and mix well
  2. Take the spring-form pan out from the freezer. Spread the hazelnut filling over the top of the biscuit base and smooth over the top as much as possible
  3. Cover with cling film and refrigerate For the caramelized hazelnuts

For the caramelized hazelnuts

  1. In a small saucepan combine hazelnuts, coconut oil and agave syrup and bring to a boil over medium heat. Stir constantly for about 10 minutes until nuts toasted and caramelized
  2. Remove from heat and allow to cool For the caramel sauce

For the caramel sauce

  1. Mix all ingredients in a small saucepan. Bring to a boil over medium heat
  2. Simmer stirring constantly until smooth
  3. Take it off the heat and let it cool down
  4. Pour the caramel sauce over the top of the cheesecake and garnish with caramelized hazelnuts and pink pepper
