Ingredients

  • 1 cup basmati rice
  • 2 cups boiled water
  • 2 chicken breast, cut into small bites
  • Salt to taste
  • 1/2 tsp turmeric
  • 1 tsp lemon juice
  • 3 eggs
  • Few coriander leaves

Instructions

  1. Heat one non- stick fraying pan over a medium high heat with some water
  2. Add the diced chicken, season with turmeric and pepper and cook for about 10 minutes or until chicken is ready
  3. Wash basmati rice under running cold water until water runs clear
  4. Let the rice dry in strainer for 10 minutes
  5. Add 2 cups of boiled water in a pot, salt and lemon juice. Add the rice and cook for 20 minutes. And then turn off the heat. Let it stand for 10 minutes covered
  6. Beat the eggs in a bowl with a fork
  7. Add the eggs in a heated nonstick skillet and stir to scramble
  8. Transfer the rice in a bowl, add the chicken and scramble eggs
  9. Serve fried rice with coriander leaves on top
