Ingredients

  • Chilli oil cooking spray (4-5 sprays)
  • 4 tbsp fajita mix
  • 4 chicken breast
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large onion
  • 200g grated cheese
  • Juice of 1 lime
  • 6 Tortillas warmed
  • Coriander leaves for garnish (optional)

Instructions

  1. Slice the bell peppers and onion and set aside
  2. Cut the chicken breast into strips, add lemon juice and sprinkle with fajita seasoning, stir to combine and marinate for at least 30 minutes, or you can marinate your chicken the night before
  3. Spray a large skillet with chilli oil cooking spray, heat over medium- high heat. Add the chicken strips and stir fry until cooked
  4. Remove the chicken from the skillet and set aside
  5. Then add in the sliced onions and peppers, cook them 7 minutes or until tender, stirring occasionally
  6. Place the cooked chicken back into the skillet and cook with the bell peppers and onions for another 2-3 minutes
  7. Meanwhile warm your tortillas in the oven
  8. Place the chicken mix into the middle of each warmed tortilla, top with grated cheese, coriander leaves and serve with sour cream, guacamole or salsa.
