Ingredients

  • 1 1/2 cups dry red lentils
  • 1 large onion
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 1 ripe tomato grated
  • 1 cup canned coconut cream
  • 1 1/2 tsp ground cumin
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp smoked paprika
  • 1 tbsp coconut oil
  • 3 cups water
  • Sea salt and pepper to taste
  • 1/2 cup chopped fresh coriander

Instructions

  1. Heat oil in a pot. Add onion, garlic, ginger and sauté for about 5-8 minutes. Add tomato and cook for about 3-5 minutes
  2. Add cumin, curry, turmeric, paprika and stir to combine
  3. Add lentils and 3 cups of water and simmer for about 10-15 minutes or until the lentils are tender
  4. Add coconut milk and cook for about 5-8 minutes
  5. Serve warm with rice or as desired. Season with salt and pepper to taste and garnish with fresh chopped coriander
