Vegan Black Bean Brownies

Ingredients

  • 8 tbs cocoa powder
  • 26 medjool dates
  • 2 cans black beans (400g each), rinsed and drained
  • 1/4 cup coconut milk or any other plant - based milk
  • 2 tbs peanut butter
  • 3 tbs maple syrup
  • Pinch salt to taste
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 50 g chopped dark chocolate or chocolate chips
  • 1 tsp cornstarch
  • 1 cup espresso, brewed and cooled (40ml)
  • 1/2 cup walnuts chopped
  • 1 tbs orange zest

Instructions

  1. Preheat the oven to 180 *C
  2. Add the dates to the food processor along with rinsed black beans and blend until smooth
  3. Add the coconut milk, maple syrup, peanut butter and blend
  4. Add the mixture to a large bowl with the rest of ingredients and mix well
  5. Poor the brownie mixture into non stick baking pan with parchment paper
  6. Bake for 35 minutes then remove from oven. Allow the brownies to cool completely before slicing them, as they are very fragile when warm

Makes 15-20 brownies (depending on how big you cut them)
