Ingredients

  • 1 cup uncooked quinoa well rinsed and drained
  • 2 cups water
  • 1/2 tsp garlic powder
  • 1 fresh ripe tomato, pureed
  • 1/2 cup corn, drained
  • 1 onion, minced
  • Sea salt & black pepper, to taste
  • Fresh coriander for garnish
  • Fresh lime cut into wedges for garnish

Instructions

  1. Place 1 cup quinoa in a strainer and rinse it under cool water
  2. Transfer quinoa to a pot and add 2 cups of water. Place pot over heat and bring to a boil. Add red pepper, corn, garlic, sea salt and pepper. Stir to combine
  3. Let it cook for 15-20 minutes, Do not over-boil

Serve with coriander and lime, hot or cold!
