Ingredients

  • 1kg self raising flour
  • 1 1/2 tsp baking powder
  • 1tsp salt
  • 2 cups muesli
  • 1/2 cup raisins
  • 1 cup almonds, chopped
  • 1/2 cup sesame seeds
  • 1/2 shredded coconut
  • 1 1/2 cup brown sugar
  • 2 eggs
  • 500gr yogurt
  • 500gr bread butter

Instructions

  1. Preheat oven to 180*C
  2. In a bowl combine the dry ingredients together (muesli, raisins, almonds, sesame seeds, salt and coconut). Set aside
  3. Beat the butter and brown sugar together until pale and creamy then add the eggs, yogurt and mix well
  4. Reduce speed to low add the dry ingredients and mix well until completely combined
  5. Add the flour and baking powder at the end, beat again until well combined
  6. Pour the mixture into a baking tray with a parchment paper, slice the dough in equal pieces into squares, however you like your rusks. Bake for 25-30 minutes to 180*C, until golden brown
  7. Remove from the oven and let them aside to cool. Once cool, use a knife, separate the slices and space them out and bake again for about 3 hours to 100*C, until they become dried out like rusks
  8. Turn off the oven and leave them in over night

Enjoy with a cup o coffee!
