Lemon Yogurt Poppy Seed Muffins

Ingredients

  • 3 cups all - purpose flour
  • 3 tsp baking powder
  • 1 tsp soda powder
  • 1/2 tsp salt
  • 6 tbsp poppy seed
  • 260g unsalted butter, melted and cooled
  • 1 tbsp buttermilk
  • 4 tbsp plain full fat yogurt
  • 1 1/2 cup sugar
  • 6 eggs
  • 2 tbsp vanilla extract
  • 6 tbsp lemon juice
  • Zest of one big lemon

Instructions

  1. Preheat oven to 200°C. Place paper baking cups into muffin pan. Set aside
  2. Put the sugar, buttermilk and melted butter in a bowl. Beat until white and smooth
  3. Add the eggs and beat for 2 minutes. Add the lemon juice, lemon zest, vanilla extract and yogurt
  4. Add the flour and salt and stir until combined. Add the baking powder, baking soda and poppy seeds and stir until combined
  5. Bake for 20 minutes
  6. Allow to cool completely before serving
  7. If you enjoy a real lemon flavor then you can add more lemon juice and lemon zest.
