Ingredients

  • 2 cups strawberries, leaves removed
  • 1 to 2 tablespoons fresh lemon juice
  • 1 to 2 tablespoons pure maple syrup
  • 2 tablespoons chia seeds

Instructions

Place strawberries in a saucepan over medium heat. Cook for about 5 to 10 minutes, or until fruit breaks down. Mash strawberries with a potato masher.
In a small bowl, combine maple syrup and fresh squeeze lemon juice. Turn off heat and remove saucepan from heat. Stir in maple syrup and lemon juice mixture. Taste and add more syrup or juice to taste.
Stir in the chia seeds and let stand for 5 minutes, until thickened.
Transfer jam to mason jar or other container. Once jam has cooled to room temperature, cover and store in fridge.
Chia jam can be stored in refrigerator for about 2 weeks.
